For our Scottish recipe, I chose to make Cottage Pie. While making this recipe, I learned that the only difference between this pie and Shepherd’s Pie, is that Shepherd’s Pie is made with lamb, and this pie is made with beef! I hope you enjoy learning how to make this delicious dish!
Ingredients for Cottage Pie
2 lb / 900g peeled potatoes, quartered
6 tbsp milk
1 stick/ 110g butter, cubed
Salt and ground black pepper
1/2 tbsp lard or dripping (optional)
1 cup/ 115g chopped onion
1 cup / 115g chopped carrot
1 clove garlic, minced
2 cups / 450g ground/ minced beef
1 pint / 600 ml beef stock
1 cup / 115g chopped white mushrooms
2 tbsp finely chopped flat leaf parsley
1 tbsp all-purpose flour
1 cup/ 115g grated Cheddar Cheese
A gallery of the preparation:
1. Preheat the oven to 375 degrees F or 190 degrees C
2. Boil the potatoes until soft and then drain.
3. Put the milk and butter in the pan in the same pot and warm gently until the butter has melted.
4. Add the potatoes and mash the mixture. Season to taste and keep to one side.
5. Melt the lard or dripping in a large deep pan (optional).
6. Add the onion and carrot and fry for 5 minutes, then add the garlic and cook for another minute.
7. Add the ground beef and one quarter of the beef stock into the pot with the carrot and onion, and cook, stirring constantly, until the meat is browned.
8. Add the parsley and mushrooms and season with salt and pepper. Cover with a lid and cook for 15 minutes.
9. Mix the flour into water and pour into the sauce, and stir until the sauce has thickened.
10. Place the meat into a pan.
11. Cover with the mashed potatoes.
12. Sprinkle the cheese on top of the potatoes.
13. Bake in the oven for 30-35 minutes until the surface is crispy and brown.
14. Serve.
15. EAT!!!

This recipe can be eaten at any time. It doesn’t matter how cold it is outside because it tastes good any time it’s eaten! I am definitely going to make it when we get back home.
