You don’t have to be a millionaire to make Millionaire’s shortbread! This is a Scottish treat that we tried a couple of times and really enjoyed it.
Ingredients:
For the shortbread:
225g/8oz plain flour
175g/6oz unsalted butter, cold, cut into cubes
75g/2¾oz caster sugar
For the topping:
150g/5oz butter
1 x 379g can condensed milk
100g/3½oz golden syrup
350g/12oz dark chocolate, or a mixture of dark and milk, chopped into small pieces
Process:
1) Pre heat the oven to 150C/300F.
2) Line a 9×9 cake pan with parchment paper.
3) Mix the flour and butter in a bowl with your hands until it is mixed together and looks like bread crumbs.
4) Add the sugar and mix it in with your hands.
5) Pour the mixture into the pan and flatten it out equally.
6) Bake the shortbread in the oven for 30 minutes or until light brown. When it is done, set it aside to cool.
Make the topping while the shortbread is cooking:
1) Heat the butter, condensed milk and the golden syrup in a saucepan until butter is melted at medium heat (stirring occasionally).
2) Once the butter is melted, increase the heat to bring the liquid to a boil stirring often.
3) When the caramel thickens and turns golden brown, set it aside to cool slightly.
Pour the topping over the short bread and use the back of a spoon to get the caramel into the corners. Let it cool completely.
1) Melt the chocolate in a double boiler and if you don’t have a double boiler you can make your own by getting a large saucepan and filling it half way with water and putting a smaller saucepan on top. (It is okay if the water touches the bottom of the smaller saucepan).
2) Scoop the chocolate onto the caramel and gently but quickly spread it around with the back of a spoon.
3) Let it cool off (you can put it in the fridge) and once it is cooled cut it into squares.
4) ENJOY!

Zoe, I love Millionaire’s Shortbread! My family is Scottish, and my mum makes it around Christmas-time every year. All my aunts, uncles, and cousins fight over it! Yum!

Zoe – you are finding the good bits of Scotland…lots of sweets. Most of my memories of being there as a kid actually involve sweets as I think of it. You MUST try fish and chips, and may find them still wrapped in actual newspaper (though they make a fake healthy newspaper for it now), but if you do find a chip shop and they have deep fried pineapple try it…the Scots deep fry anything! On a different note, Ariel commented that dropping the kids off at the beginning of school and not seeing you two there was just surreal…Abby is already talking about when you are back. I was speaking to Nicola last night, who has been reading with interest the posts you both write, she is quite impressed by your writing styles and the depth of knowledge you are displaying. Of course, Nicola’s other comment was she made a comment and though she got it to post, but apparently she did it incorrectly. (as an aside I can totally see that happening given how Nicola loves computers!!!). So she asked me to tell you the next time I commented that she is reading with interest and impressed by the work you are both doing. It goes without saying we all wish we were able to do what you guys are!

We tried as many sweets as we could which is how much our mom would let us have! We didn’t find the treats….. they found us! We didn’t have fish and chips but we tried a soup that was so good called cullenskink which is haddock and potatoes. Give our best to Nicola and thank you for your lovely comment, we are working very hard and school on the road is different but lots of fun!

Thanks for the comment! Castor sugar is what they call normal sugar in Europe and golden syrup is like maple syrup!
They are very easy to make and are awesome to eat!
I think golden syrup is Tate & Lyle’s Golden syrup – the famous green can with recumbent lion. Its a pale treacle made from inverted suger.

You are right about the Golden Syrup – you can get it in most “British” type stores here in Canada, in fact you might even be able to buy it in Loblaws! It is great on toast!

I loved hearing all of the stories from Scotland, but this one is my favourite. My mom makes Scottish shortbread every year for us at Christmas. It is a Sinclair tradition. Quincy and Charlie miss you and want to try Haggis when you get back.
