While in Melbourne, we had a chance to have a cooking class with chef extraordinaire Teta Maria Damchev. We baked Apple Slice which is a Hungarian dish, but since Melbourne is a cosmopolitan city, we are counting this as one of our Australian recipes. 🙂
Apple/apricot filling
5-6 sliced apricots
5-6 Granny Smith apples, grated
Sugar to taste
1 tbsp. semolina
1. Place the fruit in a pot on the stove on medium heat until the apples are soft.
2. Add sugar and semolina and stir until the juice in the pot has thickened.
3. Remove pot from the heat and let it cool.
Pastry ingredients
500 gr self rising flour
1 full egg (yolk and whites)
2 yolks
12 gr sugar
Pinch of salt
20 gr unsalted butter
1 tsp orange & lemon grated rinds
A bit of milk to make dough
1 packet vanilla sugar
One 11×13 baking pan
1. Mix all pastry ingredients together.
2. Let the dough sit for 10 min.
3. Separate the dough into two pieces.
4. Roll out one half and place it in the bottom of a pan lined with parchment paper.
5. Cover with the filling.
6. Roll out the other piece of dough and place it on top of the filling.
7. Use a fork to make holes in the pastry so the apples can breathe.
8. Sprinkle some sugar on top of the pastry.
9. Bake at 180-190 C (approximately 350 F) for 30 mins.
10. Enjoy!

Even though it is called “apple slice”, I think the apricots make it taste great!
Does this ever look scrumptious! Add a scoop of vanilla ice cream and ENJOY! Happy to see Maria doing what she does best, demonstrating her cooking talents. Bet you felt right at home with the family; which is how we felt when we were in Australia. Now, if there was only one way to take that dessert off the screen…perhaps one day…
