Back in London we tried some cookies which we really enjoyed. We later found out that they were called Speculoos cookies from Belgium. We are catching up on our recipe book, so here’s one for Belgium.
We found a recipe for the cookies which I am very excited to share!
Here is the recipe:
• 2 cups all purpose flour
• 1 tablespoon ground cinnamon
• 1 1/2 teaspoons ground ginger
• 1/2 teaspoon ground cloves
• 1/2 teaspoon baking powder
(We did not have any baking powder so we used 1/8 of a teaspoon of baking soda and a squirt of lemon.)
• A dash of salt
• 1 1/4 cups brown sugar
• 1/2 cup unsalted butter, room temperature
• 1 egg
1) Mix the first six ingredients in a medium sized bowl.
2) Set the dry mixture aside.
3) In a large bowl, mix the butter and the brown sugar with an electric mixer until the brown sugar is is mixed in with the butter.
4) Crack the egg into the large bowl and mix the ingredients until the mixture is fluffy.
5) Gradually pour the dry ingredients into the large bowl while mixing until all of the powder is mixed in.
6) With your hands, make the dough into a ball and split it into two halves.
7) Flatten and wrap each separately and put them in the fridge for 1 hour.
8) After an hour in the fridge, take both of the dough packages out.
9) Flatten the dough out with a rolling pin on a lightly floured surface.
10) Use a cookie cutter to cut out the cookies.
11) Pre-heat the oven to 350˚ F.
12) Smear some butter on a baking sheet or line it with parchment paper.
13) Put the cut out cookie dough onto the baking sheet. (Make sure there is space between each cookie before putting it in the oven.)
14) Put the baking sheet into the oven for about eight minutes or until the edges of the cookies darken. Repeat steps from 9 to 14 with the rest of the dough.
15) Eat.
In Belgium, these cookies are usually dipped in coffee before being eaten. One lady liked dipping her cookies in coffee to make them soft and then she would put them on her toast. She liked eating this so much that she decided to make Speculoos spread which you can buy in the store where Nutella and peanut butter are sold.
Since we bought one jar of the spread I thought it would be good idea to put the spread on the cookies!

Although I’m from Belgium I’ve never tried to make these cookies myself; I always buy them 🙂 Maybe with this recipe I will make them myself, who knows.
