During our stay at Cindy’s hutong, we had the chance to take a cooking class. We learned how to make dumplings and stir fry meals with the help of Cindy and a local lady, Liao Min. It was a lot of fun and we had a great dinner that night!
Ingredients
Filling
Dried Chinese cabbage
Minced pork with some fat
Pepper
Salt
Soya sauce
Cooking oil
Dough
Flour and water (2:1 ratio)
1. Mix the flour and water together into a dough and let it sit covered for 30 minutes.
2. Mix all the filling ingredients together.
3. When the dough is ready, roll it into a tube shape and break small pieces off.
4. Roll out the pieces with a rolling pin into circles.
5. Put a bit of the filling on a circle of dough and fold it in half.
6. Pinch the edge tightly to seal it.
7. When the dumplings are ready, put them in a pot on the stove and boil them.
8. Mix the dumplings around occasionally.
9. Take the dumplings out when they start to float.
10. Wait for them to cool, and enjoy!

We also made another two dishes… Beef and pork stir fry!
For the beef stir fry:
Ingredients:
- Beef
- Peppers
- Salt
- Soya sauce
- Pepper
Process:
1. In a wok, cook the beef in oil.
2. Drain the oil and remove the beef.
3. In a wok, stir fry peppers, salt, pepper and soya sauce.
4. Add beef and continue to stir fry.
5. 吃饭- Eat.
For the pork stir fry:
Ingredients:
- Pork
- Eggs
- Cucumbers
- Mushrooms
- Salt
Process:
1. Cook the pork in oil.
2. Drain the oil and remove the pork.
3. Stir fry cucumbers, mushrooms, salt and eggs.
4. Add pork and continue to stir fry.
5. Repeat step 5 in beef stir fry.
We all really enjoyed both recipes with everyone at the Hutong. Delicious!

Cucumbers and eggs??? This I have to try for sure! It all looks yummy. I have to add that your experiences with ‘eastern’ foods have been very colourful, and attractive to the eyes. Were they all as attractive to the palate?
