Pizza With A Twist!

A popular food in Italy is pizza which we saw/ate a lot of while in Northern Italy.  Since we are making dishes from different countries, this was the perfect meal for Italy.  This recipe is a different take on the delicious food and takes vegetables to a whole new level.  The base is made of cauliflower and is perfect for fall vegetables

 

Ingredients

4 cups or 1 head of cauliflower

4 eggs, lightly beaten

3 cups of grated cheese

4 tsp dried oregano

4 cloves of garlic, finely chopped or crushed

1 pinch of salt

tomato sauce

 

1. Preheat the oven to 200 degrees C or 400 degrees F.

2. Chop up the cauliflower into slices.

3. Put in a food processor and process all of the slices.

4. Place the processed cauliflower into a dish and microwave for 10 min.

5. Add the cheese and eggs to the cauliflower and mix.

6. Add the garlic, salt, and oregano and stir until combined.

7. To make one big pizza, spread the mixture onto the sheet.  Bake for 15-20 minutes.

 

 

 

9.  Spread tomato sauce on the pizza and add your favourite toppings.

      Hi Baba,

      I though it was a really interesting recipe for pizza because I’d never seen the base made out of anything else other than the traditional way of making it. I am glad that I got to try this recipe; I think it is a new favourite of mine!

  3. Mik, I am about to try this recipe…have one question . When I add my toppings, do I pop it into an oven again for a few minute to heat up my toppings? I like red & green peppers and other veggies but I like them a bit ‘wilted’…i.e. warm. Help? I could not download the actual recipe.

      Hi Herta,

      The recipe says that you can put it in the oven for a few minutes to warm up. When we ate it, we only put olives on, but if you want extra cheese or other toppings warmed up, you can.

    OK, finally made this and even had a dinner guest! Yummers! Healthy to the max as I also added broccoli , red peppers and tomatoes as toppings. SO good! Am feeling very smug about such a tasty AND healthy meal! Thank you!!

      1. I think that when you all return from your wanderings/ travels, you and your family will be inundated with dinner invitations and I will certainly have my invitation on the list. I will wait till your families have had their ‘hug fixes’ first.
