After some yummy Pad Thai and papaya salad – it was time to prepare the main meal. We were all full, but were still game to make a Thai chicken curry that was delicious and very fragrant with spices.
To prepare the dish, we had to do a number of steps.
First, we had to create the coconut milk from the shredded coconut we purchased at the market. To do this, we worked in partners and added water to the fresh shred. Once mixed, we had to wring out the coconut and strain it. We only kept the liquid as we had squeezed out all the flavour from the nut.
Then we had to create the fresh curry paste. You can buy this prepared in the marketplace, but part of class was learning how to make it, so it was neat to experience.
Once all the prep work was done, the main ingredients were placed in our woks and we proceeded to cook.
As we were cooking the meat and veggies, Oliver 2 came around and added the fresh coconut milk to our woks. Then we did a reduction until almost all of the milk was gone.
The girls and Oliver did a great job on the woks and we all had a lot of fun! And look at our results! Sadly, we were already full – so we packed them up to go and enjoyed them for our evening meal.
Cooking school was lots of fun and we are glad we picked the one we did. Lots of fun and lots of laughs!
Here is the complete recipe for Mussaman curry with chicken:
Serves 1-2
Ingredients
1 pound of chicken (or beef)
1/2 cup potatoes cut into pieces
3 tbsp red curry paste
2 cups coconut milk
1/4 cup of roasted peanuts
2 dried bay leaves
3 cardamoms
2 tbsp of vegetable oil
1/4 cup of palm sugar
3-4 tbsp of fish sauce
1 1/2 tbsp tamarind paste
1 cinnamon stick
Preparations
1. Cut chicken into 1 inch cubes
2. Heat oil and curry paste in wok or saucepan.
3. Add in chicken, potato, onion, coconut milk, fish sauce, palm sugar, tamarind paste, bay leaves, cardamoms, cinnamon stick and roasted peanuts.
4. Simmer until the chicken and potatoes are thoroughly cooked and reduce the sauce until thick. Remove from heat and serve with rice.

Okay now I am hungry for some thai food. I am glad I only have to open a can for coconut milk but great to see the “proper” way to make milk. The coconut has been a staple in so many of your food experiences. Continue to travel safely. Love to all. Doreen

YEs – I would also just open the can too – we take so much for granted. But it was really neat to have the fresh shred and make the milk. It’s interesting how the coconut is used by so many for survival in the East – but we really have no idea of its importance. We are learning everyday….so many things.

I was just thinking…you will definitely need to dedicate a whole kitchen cupboard for all the spices you will be using to prepare these wonderful dishes. I think I will just come to your house, and we can cook up a storm. This recipe appeared to be time-consuming at the beginning of the blog; however, when you reviewed the procedure, it sounded easier. Too bad you couldn’t just send this dish to us; since you were so full. The family that cooks together, stays together; until, the clean-up. How does that work out? What a great recipe book you can put together, after your trip. Start thinking of titles.

The dishes are pretty simply – but the prep work takes a lot of time. I would probably buy the coconut milk and chilli paste – then it would only be the chopping of the veggies and other ingredients. For sure we will cook for you…we will be making our Global Fieldtrip recipe book and cook you meal from every country! As for clean up – we have fun doing it all together:)
